Sugarplum Fairy’s Special Embutido
Ingredients:
1 kg. ground pork
1 medium onion, chopped
1 cup of pimientos in can or 2 medium red bell peppers, chopped
1 cup of pickles, chopped
1 cup of chorizo de Bilbao, chopped
1 cup of raisins
1 ½ cup of bread crumbs
2 whole eggs
2 tbsps of soy sauce
½ tspn iodized salt and pepper to taste
Intro:
I love to cook! As a kid, I would watch my dad in the kitchen cook one of his specialties. Through the years, I have learned a lot of recipes, personalized some of I know and I also have created my own.
But I’ve become very busy with work lately that I would leave the cooking to our househelper. I just give her the weekly menu and she’d take care of it. During weekends, when I am home, my attention always goes to my 2 daughters. We would eat the left-overs from the other day or just eat out or eat at my mom’s.
So last Sunday, we went to the grocery and I thought of cooking something very special for my family. I want to serve Embutido for dinner. Preparing Embutido is such hard work but it’s also a lot of fun, plus everytime I prepare this dish, I get this feeling that I love my family so much that I would give my best to prepare this dish, I call it labor of love. So enough of my intro.
Here is how I prepare my Special Embutido:

Filling:
2 hard boiled eggs, each egg sliced lengthwise into 6
4 pcs medium-sized whole Chorizo de Bilbao, sliced lengthwise into 4
half a block of cheddar cheese, cut into small bars
Procedure:
1.Mix the first 10 ingredients really well.
2.)In a 10×10 aluminum foil, put 2-3 heaping tbsps of the meat mixture, flatten the mixture just enough to form a 2 inch wide, 5-6 inch long rectangle.
3.)Fill the middle of the meat mixutre with a piece each of the sliced chorizo, egg and cheese.
4.)Roll the meat mixture so that it forms into a log, but be careful not to expose the filling. Secure the foil.
5.)Steam the Embutido for 1 hour.
6.)Let cool before peeling off the foil.
You can either serve the Embutido as a cold cut or you can fry it. But I like eating Embutido warm. Embutido goes well with either banana or tomato ketchup. Try this recipe out and enoy a wonderful meal with your loved ones!
